Click below to watch.<\/p>\n\n\n\n<figure class=\"wp-block-embed is-type-video is-provider-youtube wp-block-embed-youtube wp-embed-aspect-16-9 wp-has-aspect-ratio\"><div class=\"wp-block-embed__wrapper\">\n<iframe loading=\"lazy\" title=\"Healthy Fall Recipe: Autumn Harvest Power Bowl\" width=\"500\" height=\"281\" src=\"https:\/\/www.youtube.com\/embed\/mNoHFEv4slY?feature=oembed\" frameborder=\"0\" allow=\"accelerometer; autoplay; clipboard-write; encrypted-media; gyroscope; picture-in-picture; web-share\" referrerpolicy=\"strict-origin-when-cross-origin\" allowfullscreen><\/iframe>\n<\/div><\/figure>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-ingredients\">Ingredients<\/h3>\n\n\n\n<p>Serves 4<\/p>\n\n\n\n<p><strong>Base<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li> 1 cup cooked quinoa<\/li>\n<\/ul>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1 cup baby spinach, washed and dried<\/li>\n<\/ul>\n\n\n\n<p><strong>Roasted or Cooked Vegetables<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1\u00bd cups Brussels sprouts, halved<\/li>\n<\/ul>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1 cup butternut squash, diced and roasted<\/li>\n<\/ul>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1 cup beets, roasted, peeled, and cut into wedges<\/li>\n<\/ul>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Olive oil, salt, and pepper for roasting<\/li>\n<\/ul>\n\n\n\n<p><\/p>\n\n\n\n<p><strong>Fresh Vegetables<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li> \u00bd cup julienned red onion<\/li>\n<\/ul>\n\n\n\n<ul class=\"wp-block-list\">\n<li>\u00bd cup heirloom cherry tomatoes, halved<\/li>\n<\/ul>\n\n\n\n<ul class=\"wp-block-list\">\n<li> \u00bd cup cooked corn kernels (removed from cob)<\/li>\n<\/ul>\n\n\n\n<p><strong>Protein Options<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>4 grilled chicken breasts, sliced<\/li>\n<\/ul>\n\n\n\n<ul class=\"wp-block-list\">\n<li>or 4 pan-roasted salmon fillets<\/li>\n<\/ul>\n\n\n\n<p><strong>Toppings<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li> \u00bc cup goji berry trail mix (pumpkin seeds, cashews, walnuts, dried cranberries, and dried goji berries)<\/li>\n<\/ul>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Optional: crumbled goat cheese or feta<\/li>\n<\/ul>\n\n\n\n<p><strong>Dressing<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>2 tbsp extra virgin olive oil<\/li>\n<\/ul>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1 tbsp apple cider vinegar<\/li>\n<\/ul>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1 tbsp balsamic vinegar<\/li>\n<\/ul>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1 tsp maple syrup<\/li>\n<\/ul>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1 tsp Dijon mustard<\/li>\n<\/ul>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Salt and pepper to taste<\/li>\n<\/ul>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-directions\">Directions<\/h3>\n\n\n\n<p><strong>1. Roast the Veggies<\/strong><br>Preheat oven to 400\u00b0F (200\u00b0C). Toss the Brussels sprouts, squash, and beets separately with olive oil, salt, pepper, and thyme. Roast for about 15 minutes, flipping halfway through until tender and golden.<\/p>\n\n\n\n<p><strong>2. Cook the Quinoa<\/strong><br>Rinse 1 cup of quinoa, then simmer it in 2 cups of water or broth until fluffy, about 15 minutes.<\/p>\n\n\n\n<p><strong>3. Prepare the Protein<\/strong><br>For the chicken: season with salt, pepper, and olive oil. Grill until cooked through (165\u00b0F) and let rest before slicing.<br>For the salmon: season with salt and pepper, sear in a hot pan with olive oil for 2\u20133 minutes per side, then finish in the oven for 6 minutes.<\/p>\n\n\n\n<p><strong>4. Make the Dressing<\/strong><br>Whisk together olive oil, vinegars, maple syrup, Dijon mustard, salt, and pepper.<\/p>\n\n\n\n<p><strong>5. Assemble the Bowl<\/strong><br>Toss spinach lightly in the dressing and place it at the base of each bowl. Add quinoa, roasted veggies, onion, tomatoes, and corn.
