Ingredients

– 1/2 cup onion, small dice

– 1/4 cup celery, small dice

– 1/4 cup carrot, small dice

– 1/2 cup tomato, small dice

– 1/4 cup red pepper, small dice

– 1/4 cup olive oil

– 1 tablespoon garlic, minced

– 1 teaspoon curry powder

– 1/4 teaspoon turmeric

– 1 cup green lentils

– 1 1/2 cups vegetable stock

– 400 g paneer, cubed

Instructions

1. Heat a pot over medium heat and add olive oil. Add onion, celery, and carrot and cook for about 5 minutes until softened.

2. Add garlic and cook for 1 minute.

3. Stir in tomatoes and red pepper and cook for another minute.

4. Add curry powder and turmeric and stir to coat the vegetables.

5. Add lentils, stir well, and cook briefly before adding the vegetable stock.

6. Bring to a gentle simmer, reduce heat, and cook for 45 to 60 minutes until lentils are tender.

7. Add paneer during the final 15 minutes of cooking and allow it to warm through.
